Quick easy dinner

I made this quick dinner last night, because I had cooked a big meal (with extra for lunches!) every other night this week. I love eggs because they are so quick to cook and I am trying to eat a little more protein right now, because my appetite has been too big and it helps to reduce my appetite.

I used one slice of wholegrain toast, and made a small omelette with three eggs, half a chopped onion and lots of pepper. I also added some chopped pickles and some hot sauce and a little salt. I got some buffalo wing sauce this week, as there’s no reason I can’t use it for vegetarian meals! Unfortunately it contains milk powder so it’s not vegan, so I might try a different, vegan hot sauce next time.
