Quick vegan dinner recipe

It’s been a hot day here in Norwich today, so I felt like a simple, uncooked dinner. I find that a salad like this can be a little bland, so I added heaps of flavour with the dressing; crushed chopped garlic, and plenty of

pepper and oregano, and a little salt.

I’ve also added chickpeas to this salad for some healthy plant protein; if I had a little more time I would have maybe cooked some lentils to add as well. Also, please note that I’m currently trying to lose weight, so this is quite a low calorie dinner. If you are aiming to increase or maintain your weight, I would recommend adding 100/200g red lentils, and perhaps a slice of wholegrain toast.

Simple chickpea and spinach salad: serves 2

  • 1 cup iceberg lettuce
  • 2 cups fresh baby spinach
  • 1 red pepper, chopped
  • 2 celery stalks, chopped
  • 1 can chickpeas, drained
  • 2/3 large tomatoes, chopped
  • 15 black olives, chopped
  • cucumber slices on the side.

For the dressing:

  • 3 tbsp fresh olive oil
  • 3 tbsp balsamic vinegar
  • juice of half a lemon
  • 3 garlic cloves, crushed and finely chopped
  • salt and pepper
  • pinch of oregano


Would you add anything else to this salad? maybe some finely chopped chillies, or other herbs/spices?
