Chickpea, olive and parsley salad

Due to trying to lose a bit of flab that’s built up over a summer full of over indulgence, I have been having raw salads for lunch this week. I have noticed a difference already because I have felt less bloated, so I’m going to continue with it for a while.

I know there are lots of “raw til 4” type programs around, but I don’t feel like you needa huge amount of guidance with this; I just chop up some salad for lunch!

This one was my favourite so far; not 100% sure whether you would count chickpeas as raw, but I thought as they are dried then re-hydrated that might be ok? Let me know what you think. Also olives; living in the U.K. I can’t really get fresh olives, but I’m aiming for foods that are not cooked so maybe canning (they were from a jar but you know) is ok.

Chickpea, olive and parsley salad:

  • 80g rocket lettuce
  • 1 salad tomato, chopped
  • 1 small red pepper, chopped
  • 100g cucumber, chopped
  • 1/2 drained chickpeas
  • 10 olives
  • 1 Tbsp chopped parsley
  • Salt, pepper to season
  • Sesame seeds to scatter on top

Put it all in a bowl and put it in ya belly!
